If you're still antsy to see what great dishes will be included, Ina gave her followers a sneak peek of one of the easy appetizers that will be found inside the book, and it's a delightfully fresh fig and goat cheese toast.

"Sneak peek from my new book Modern Comfort Food (available Oct 6th) - easiest appetizer ever! Fig & Cheese Toasts. Fig jam, goat cheese, a slice of fresh fig on toast and a drizzle of balsamic vinegar. Yum," she wrote in the caption. Yum, indeed! And for those who need step-by-step instructions, she published the recipe on her Barefoot Contessa website.

You'll need some country bread, fig spread, plain creamy cheese such as goat cheese or cream cheese, kosher salt, fresh ground pepper, fresh figs, microgreens, and thick balsamic vinegar. Then, you'll toast the bread to your desired crispiness, lather up that fig jam, soften the cheese in the microwave for about 30 seconds before spreading it on top, then sprinkle the salt and pepper, add fig slices and a few microgreens onto the toast, and finish it off with the balsamic glaze. It's really that simple, and it can probably be made with whatever similar spreads or fruits you have in your house already.

Although it's quick, the finished product looks like a work of art, so if it's any indication of what else Modern Comfort Food will include then it's totally worth the wait until October. And don't worry, Ina's still making her signature Cosmopolitans in quarantine. Bless her heart.

Herbed Goat Cheese

  1. Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  2. Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

We've been on Team Ina for years. But in 2020, thanks to her impressive quarantine cosmos, freezer stocked with chocolate peanut butter cup gelato and can't-miss Instagram cooking tips, our fandom for the Barefoot Contessa runs deeper than ever.

So in March, when Garten announced she would be releasing her first cookbook since 2018's Cook Like a Pro ($17.46, Amazon), we could barely contain our excitement.

Now available for preorder and released officially on October 6, Modern Comfort Food: A Barefoot Contessa Cookbook ($25.13, Amazon) offers "easy-to-follow instructions, with lots of side notes for cooking and entertaining. It's like having Ina right there beside you, helping you all the way," according to a post on BarefootContessa.com. Garten will teach you how to whip up 85 comforting dishes, including:

Oh yes, and the Fig and Goat Cheese Toasts she just revealed on Instagram in a tease for the book that's now less than 3 months away from our doorsteps.

The beginner-friendly appetizer takes about 10 minutes tops, and features just a few high-quality ingredients, including creamy cheese, fresh figs and "good fig spread" (like Garten's pick, Dalmatia; $9.25 for 8.5 ounces, Amazon).

While we aren't doing much group gathering this summer, we plan to cut this recipe in half and enjoy it for a first course for a date night in— just as we imagine Ina and Jeffrey might do.

If you can't get fresh figs in your area just yet (fig season typically runs from August to October in most parts of the U.S.), we featured a topped toast similar to this one from Garten's kitchen that includes dried figs instead of fresh: Goat Cheese Crostini with Fig Compote.

Whichever option you choose, we recommend pairing it with a fruit cosmo or citrusy sidecar to round out the just-like-Garten cocktail hour.

Fig & Goat Cheese Toasts

Serves 6 to 8 | Level: Beginner

  • 1 (1-pound) loaf country bread, halved, and sliced crosswise 3/8 inch thick
  • 1 (8.5-ounce) jar good fig spread, such as Dalmatia (see note)
  • 8 ounces plain creamy cheese, such as goat cheese or cream cheese
  • Kosher salt and freshly ground black pepper
  • 2 ripe fresh figs, halved and thinly sliced lenghtwise
  • Microgreens
  • Syrupy balsamic vinegar

Toast the bread in a toaster and while still warm, spread the fig spread on each slice to cover it entirely. Place the cheese in a bowl and heat in the microwave for 30 to 45 seconds, until it's creamy and spreadable, leaving the edges of the fig spread visible. Sprinkle lightly with salt and pepper. Cut each toast crosswise to make appetizers that will be easy to eat. Place a fig slice on each piece, top with a few microgreens, and drizzle lightly with the balsamic vinegar. Serve at room temperature.

Note: I prefer fig spread, which has less sugar than fig jam or fig preserves, but of course you can use either. Choose a fig spread that is quite thick or it will be hard to spread the cheese on top.
